An Easy Roasted Tomato Sauce

Hello Friends!

Tomatoes are starting to ripen.

The ones I have been picking I have been coring and putting them in gallon sized bags. Then I put them in the freezer until I have enough to can a few batches. This year I am making large batches of tomato sauce.

Here is some health facts about those wonderful fruits!

1) Tomatoes contain a large amount of lycopene, a carotenoid and an antioxidant that can be highly effective in scavenging free radicals.

2) One tomato can provide about 40 percent of the daily vitamin C requirement.

3) Tomatoes are known to help improve the digestive system, and the liver.

4) Tomatoes are also loaded with fiber which helps prevents constipation.

I don’t know about you, but (most of) our family really enjoys tomatoes. Our kids are known to pick them and eat them like apples while they play outside.

I had a lot of cherry tomatoes this week, so I roasted them and made a sauce. It was so good and easy I thought I’d share!

Cherry Tomato Sauce

Ingredients

5 cups cherry tomatoes (about)

1/4 cup olive oil

1/2 tsp onion powder

1/2 tsp garlic powder

2 tsp dried Italian seasoning

Salt and Pepper to taste

Preheat oven to 300 degrees F.

Remove stems and wash tomatoes.

Drizzle tomatoes with oil and salt in pepper

Place tomatoes in a single layer on a baking sheet or roasting pan.

Bake for 40 minutes or until skins are wrinkly.

Let cool and then add onion powder, garlic powder and Italian seasoning.
​Blend in food processor until creamy.
